Smoked Salmon Scrambled Eggs

Salmon Scrambled Eggs– Prep time: 5 minutes

Serves 1

o 4 eggs
o 60ml milk
o Black pepper
o 1 tablespoon olive oil
o 50g smoked salmon (chopped)
o 1 tablespoon freshly chopped dill
o 2 slices of wholegrain bread


Beat the eggs and milk together in a bowl until a smooth consistency. Heat up a pan and add the olive oil. When the pan is hot add the eggs to the pan. Reduce the heat and gently cook for 3-4 minutes, continually stirring the eggs to a consistency of your liking. Stir in the pepper, and then add the chopped salmon and dill. Stir into the eggs thoroughly and cook for a further 1 minute on a very low heat.
In the meantime, toast the two slices of wholegrain bread. Spoon the egg on top of the toast and serve.
