Spicy Chicken and Broccoli Salad– Prep time: 25 minutes

Serves 4

2 broccoli heads
2 tablespoons of olive oil
1 handful of black pitted olives
300g pre-cooked chicken (roast chicken)
3 spring onions
3 tablespoons of soy sauce
2 red chillies
1 garlic clove

Cut the broccoli heads into florets and dice up the spring onions, garlic clove and red chillies.
Add the broccoli to a bowl of boiling water and cook for 4-5 minutes, or until tender. Then put into a large bowl.
In the meantime, heat the oil in a pan and fry the spring onions for 2-3 minutes and add the chillies and garlic. Cook for a further 4 minutes on a low heat.
Remove this mixture and add to the broccoli. Then add the chicken which will need to be slice up, and also add the olives. Give a mix.
Add the soy sauce to the pan and heat on a medium heat. When warm, drizzle over the salad mix. You can eat hot or cold.
