
Grilled Chicken with Vegetable Skewers
(Serves 4)
Ingredients
4 skinless and boneless chicken breasts
2 tsp olive oil
2 level tbsp any type of BBQ seasoning
2 yellow peppers deseeded and cut into chunks 2 courgettes halved lengthways and halved 250g cherry tomatoes
2 red onions, cut into chunks Lemon wedges to serve
Method
One by one place the chicken breasts between cling lm and, using a rolling pin, atten until about 1cm thick. Brush each piece using half of the oil and 1⁄4 tbsp of the seasoning.
Thread the vegetables on the skewers (pre -soak wooden skewers in water before using) and brush with the remaining oil.
Heat the grill to hot and cook the chicken and the vegetable skewers, turning frequently until the chicken is cooked through.
Serve the dish with the lemon wedges.
