Chickpea & Nut Blondies

Ingredients for 9 servings

  • Wet
    • 1 can of chickpeas, drained
    • 1/3 cup cashew butter (OR other natural nut butter)
    • 1 tablespoon vanilla extract
    • 1 egg OR flax egg (milled flax mixed with water)
    • 3 tablespoons agave OR maple syrup OR honey
    • 1 ripe banana
  • Dry
    • 1/4 cup wheat flour (or oat flour)
    • 1 teaspoon baking powder
  • 1/3 cup choice of nuts (I used macadamia)


  1. Set oven to 350F.
  2. In a large bowl, mix together the dry ingredients.
  3. Add the wet ingredients to a food processor or high powered blender.  Blend until smooth.  Empty the contents into the bowl with the dry ingredients and mix together using a spatula.  Once it’s thoroughly mixed, set aside.  Fold in optional nuts and seeds.
  4. Line a square 8×8 (or 9×9) baking pan with parchment paper, then pour in the batter.
  5. Bake for at least 25 minutes or until the top is golden brown and you can pierce it with a fork and it comes out clean.
