Smoked Salmon & Egg Bagel

  • 1 thin bagel – toasted
  • 2 large eggs and 1 large egg white – beaten and seasoned with salt and pepper
  • 5g unsalted butter
  • 30g smoked salmon – shredded
  • Cherry tomatoes

Melt the butter in a non stick pan on a high heat. When it’s melted add the eggs and turn the heat down. Stir the eggs slowly until they scramble and look like they need another 30-45 seconds cooking. Remove from the heat and continue to stir for 20 seconds, pile onto the toasted bagel and top with the salmon and tomatoes.
