
Coconut Chicken & Rice
Ingredients
- 150g chicken breast
- 10ml olive oil
- 125g cooked basmati rice
- 10g desiccated coconut
- 1/2 green pepper
- 1/2 onion
- 4 cherry tomatoes
- Paprika
- Black pepper
Method
Firstly, Pre heat pan. Then add the olive oil and pre chopped chicken breasts. Cook for about 10 minutes.
Add the diced onion, green pepper, tomatoes, pre cooked basmati rice and also desiccated coconut. Cook for roughly 5 more minutes.
Finally add the paprika and a pinch of black pepper before serving.
