Feta, Kale & Quinoa Bowl

Serves 1


  • 75g red onion – sliced
  • 1/2 medium courgette – halved then sliced
  • 5g coconut oil
  • 70g red pepper – sliced
  • 100g kale
  • 2 tsp lemon juice sea salt and ground black pepper
  • 4 sprays fry lite olive oil spray
  • 125g pre cooked quinoa
  • 75g feta cheese

Spray a small pan with the fry lite and gently cook the peppers and onions. In a larger pan, melt the coconut oil, adding in the kale, tossing it to coat it in the oil. Add the lemon juice (it will steam up) and the salt and pepper and stir fry until it wilts. Warm the quinoa in a microwave or add to the pan with peppers and onions. Assemble with the kale on the base, then the quinoa and peppers and top with crumbled feta.
