Veggie Sausage & Cajun Sweet Potato

Serves 3
  • 9 Vegetarian sausages
  • 240g raw weight sweet potato
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 medium courgette / zucchini
  • 6 cherry tomatoes
  • 1 tsp cajun Spice (I used Slap ya Mama)
  • Frylite spray oil

Turn oven to 190 fan and put a large baking tray in to heat up. Wash the sweet potato, pat dry and cut into wedges.

Put the wedges into a plastic food bag with the cajun spice and spray with 4 sprays fry light. Seal the bag and massage to coat the wedges. Tip the wedges onto the hot baking tray and put its the oven for about 10 mins. Roughly chop the peppers and courgette. After 10 minutes, turn the wedges and add the sausages and veg to the pan, spray with Frylight and season with salt and pepper. Place back in the oven for about 20 minutes or until the sausages are cooked. Check on them after 10 minutes and turn accordingly.
