
Energising Edamame & Avocado Salad
Ingredients
- Handful of spinach
- 45g edamame beans
- 4 cherry tomatoes
- 10g mixed seeds
- 10ml olive oil
- 10ml balsamic vinegar
- 1/2 medium avocado
Method
1. Choose tomatoes and avocado before adding to a serving bowl with all other ingredients. 2. Mix olive oil and balsamic vinegar and drizzle over the top before serving
