Chicken Cesar Salad

Serves 1
  • 150g chicken breast
  • 1/2 medium avocado
  • Handful of spinach
  • 20g Feta cheese
  • 7-8 Cherry or Plum Tomatoes
  • 10g 0% Greek yogurt
  • 1 crushed garlic clove
  • 5ml olive oil
  • Squeeze lemon juice

Firstly, lets cook the chicken. Dice into small slices, and place into a frying pan. Cook on a medium heat for 5-6 minutes, turning occasionally. Make sure meat is cooked through before consuming.

Then lets make Caesar dressing by mixing the Greek yogurt, olive oil, crushed garlic and the squeeze of lemon juice. Blitz it all in a blender.

Then, dice the avocado into chunks and place in serving bowl with the spinach, sliced tomatoes and sliced cooked chicken. Cut the feta cheese into squares and add to other ingredients. Pour on the Caesar dressing and toss it all together.
