Chicken & Spicy Chorizo Paella

Serves 1
Ingredients
  • 10ml olive oil
  • 150g chicken breast
  • 2 cloves garlic
  • 1/2 chopped onion
  • 1/2 chopped bell pepper
  • 1 tsp saffron
  • 125g cooked rice
  • 75g cooked prawns
  • 15g chopped chorizo
  • 2 chopped tomatoes
  • Fresh parsley
  • Salt & pepper
  • 10ml water
  • 1/2 lemon Paprika
Method

Firstly, heat pan before then add the olive oil, diced chicken breast and the cloves of garlic. Cook this on a medium heat for 5 – 6 minutes.

Then add the chopped onion, pepper, saffron along with the cooked rice. Continue to cook for a further 5 – 6 minutes.

Add the prawns, diced chorizo, chopped tomatoes, parsley and season with the salt & pepper. Add 100ml water to the pan and cook for another 5 minutes on low heat. Then finally, add juice from 1/2 lemon & sprinkle with paprika before serving.
