Chicken Cesar Salad

Serves 1-2
  • 150g cooked chicken breast
  • 1/2 medium avocado
  • Handful of spinach
  • 20g hard goats cheese
  • Handful grated carrot
  • 10g 0% Greek yogurt
  • 1 crushed garlic clove
  • 5ml olive oil
  • Squeeze lemon juice

First up….. Make Caesar dressing by combining Greek yogurt, olive oil, crushed garlic and lemon juice. Whilst thoroughly or blitz in a bullet. Then chop avocado and place in serving bowl alongside spinach, carrot and sliced cooked chicken. Cut the goats cheese into thin flakes and add to other ingredients alongside Caesar dressing. Then serve.
