
Cheesy Chicken Risotto
Serves 4 Ready in 35 mins
Ingredients
- Low calorie cooking spray
- 4 large skinless and boneless chicken breasts
- 350g dried risotto rice
- 1.2 L boiling chicken stock
- 2 leeks thinly sliced
- 4 level tablespoons freshly grated parmesan cheese
- Extra veg can be added e.g. Mushrooms, spinach
Method
Spray a large non stick frying pan with the low calorie spray an and place over a high heat.
Cut the chicken into bite-size chunks, add to the pan and fry for 5 mins or until they begin to brown.
Reduce the heat to medium and add the rice and stock ( don’t worry if all the stock doesn’t go in – add it
in stages)
Simmer for 10 mins, stirring frequently to give a creamy texture.
Stir in the leeks (and other veg ) and simmer for a further 10-15 mins or until the rice is just cooked and
most of the stock has been absorbed, stirring frequently. If adding spinach add just before the end of the
cooking time.
Sprinkle over parmesan, grind over a little black pepper and serve hot.
