Seafood Paella

Seafood Paella

Serves 4 Prep time 40 mins

 

Ingredients

  • Low calorie cooking spray
  • 1 onion ,finely chopped
  • 2 garlic cloves , finely chopped
  • 900ml chicken stock
  • ¼ tsp turmeric
  • 1tbsp smoked paprika
  • 225g dried paella rice
  • 500g mixed seafood – mussels squid prawns
  • 100g frozen peas
  • 2 large carrots peeled and finely cubed
  • Red pepper finely cubed
  • 200g runner beans cut into small pieces
  • Salt and freshly ground pepper
  • Handful of flat leaf parsley, finely chopped

 

Method

Place a large frying pan, sprayed with low calorie cooking spray, over a medium heat and stir fry the
onions and garlic for 4-5 mins, or until softened.

Stir the turmeric into the stock, add the stock to the pan and stir in the paprika. Bring to a simmer ,
add the rice- stir once , then cover and leave to simmer gently for 15 – 20 mins.

Add the seafood and all vegetables. Cook for a further 10mins, stirring occasionally, until the rice is
soft, the vegetables are tender and the seafood is warmed through. Season well and stir in the
parsley.
