- 200g Sweet Potato
- 1 Lemon Juiced
- 1 Tbsp Wholegrain Mustard
- 2 Tbsp Honey
- 200g Rump Steak
- 2 Long Stem Broccoli
- 1 Handful Curly Kale
Pre heat the oven to 200 Celsius. Then, cut the sweet potato into wedges and place onto a baking tray. Then put into the oven and cook for approx. 25 minutes.
To make the dressing, mix the lemon juice, mustard and honey well in a bowl.
After the wedges have been in the oven for 10 minutes, brush the steak with a think coating of oil and season with salt & pepper.
Heat up a griddle pan and when piping hot add the steak and fry for 3-4 minutes each side. Then take out of the pan and leave to rest for a few minutes. While the steak is resting, add the broccoli and kale to the griddle pan and stir fry for 1 minute.
Slice the steak into strips and serve on top of the sweet potato and stir fried vegetables.
